However, for those of an adventurous culinary inclination, I copy below my highly commended (Falkirk & District Canine Society Annual Show) contribution to an extended diet: Loopy Setter Dish This is a concept rather than a strict recipe - so feel free to vary depending on how loopy you feel. For 4 ish. Ingredients Setter fillet - skin on but remove fur (preferably from the leg joint) Very good extra virgin olive oil 2 setter paws (optional) cut into thin slivers and remove the claws and fur 2-3 moderate-large ripe tomatoes - skinned, seeded, cut into strips 3-4 pieces sun dried tomatoes - cut into fine strips 4-6 black olives - stoned and cut into slices Flatleaf parsley - roughly chopped leaves only 12-18 capers (preferably the dry salted ones [washed] rather than the ones in brine) 12 rosemary needles Salt and freshly ground pepper Method Grill, barbecue or pan-fry (little oil) the fillets skin side so it is crisp and browned and the flesh just pink and moist. Meanwhile If using garlic and chili - fry off in a little oil then add some more oil and proceed - otherwise just warm all the other ingredients through in the best olive oil you can afford (add parsley late). If using basil rather than Rosemary - add it to the oil just before serving. Don’t overheat the oil or fry the sauce ingredients - they just warm and suffuse the oil with their flavours. Put the dog fillet on the plate skin side up - sprinkle with salt. Pour sauce over and under dog, dividing bits evenly and arranging to look nice! Variations 1. Substitute 8 large basil leaves (shredded) for the Rosemary 2. Add 1 quartered and sliced seeded fresh chilli and 1 sliced clove garlic 3.
